The vines are manually harvested in the first week of October. The temperature controlled maceration lasts 8 to 10 days. The wine is then aged in French oak for 6 months. The age of the vines varies from 20 to 40 years. The sandy and clay soil reaches so deep that no irrigation is ever needed. Clay endows the wine with longevity
